Spinach Chocolate Chip Cookie | Silver Plate

This cookie is so yummy it’s stupid.
I mean you should bake them for your kids; they will never know there is spinach in them…and a lot of it. We bake a ton of protein cookies around here. We tweak them based on what our body needs, and what tastes good of course. This tweak was made because our goal for the week was to up our veggie game, but we didn’t feel like a savory egg scramble to get our spinach. So…why not put it in a protein packed sweet treat?! We did. It was amazing. And now we share it with you. Ingredients:
- 2 T coconut flour
- 1 T almond meal
- 2 scoop collagen protein
- 3/8 tsp guar gum
- 1/4 tsp psyllium husk powder
- 1/8 tsp milk powder
- 1/8 tsp baking soda
- 1/8 tsp salt
- 1 large egg
- 1+ tbsp fat (grass fed butter, ghee, olive oil, coconut oil, or MCT oil) I used MCT this time
- 1 date
- 1 T swerve (or stevia to taste)
- Dash of vanilla
- 1 cup spinach
Directions:Whisk in a bowl all the dry flour ingredients. I blend all the wet ingredients together with an emersion blender until the spinach is obliterated. Ha! But any blender will work.
Then add to flour, stir and bake. This one needs to bake for longer than usual due to it’s wet consistency. I baked it probably a total of 20-25 min at 350. The center shouldn’t be hard, but it shouldn’t jiggle when out of the oven.
