Quick + Dirty Pumpkin Waffles

We don’t all have time to create these beautiful three star restaurant meals every time we need to eat. Am I right? Ha! 

Majority of us don’t have time for this and barely have time for meal prepping. 

My desire behind living the Roic + Bru Lifestyle is to teach you how to get results without the rigid efforts of a crazy diet. Even the best weight loss plans have some sort of meal prepping facet to it. Hey, if you can meal prep, have time for it, enjoy it, then by all means, make your life easier by doing so! 

I don’t always have time for meal prepping; I’d rather spend Sunday night with my Husband before he returns to work on Monday, than go pantry overhauling at the store and then spend hours in the kitchen prepping everything for the week. 

I hope to help you find recipes that require little time and effort to whip up, so that you don’t need to spend a ton of time in the kitchen, and compose plates that are conducive to Smart Burning! 

With that, here is a quick and dirty recipe for pumpkin waffles. It takes me less than 15 min to whip up, and they are Smart Burning for your gorgeous body. No guilt need follow. Xo
Quick + Dirty Pumpkin Waffles

Yields: 3 Belgian Sized Waffles

Ingredients:

  • 1.5 cups whole wheat or gluten free flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 2 Tbsp sugar
  • 3 servings protein powder (I use Bulletproof Collagen protein– use coupon code: bulletproof1610 for 10% off!)
  • 1 large egg
  • 1.25 cups lukewarm almond or regular milk 
  • 1/3 cup pumpkin purée
  • 3 Tbsp melted grass fed butter

Directions:

  1. Combine all dry ingredients. 
  2. In a separate bowl, whisk together the egg, lukewarm milk, pumpkin purée, and butter. 
  3. Combine wet and dry ingredients, stirring until just combined. Lumpy is ok!
  4. You’re ready for your waffle iron or skillet!
