
Lemon Lavendar Cakie
Ingredients:
- 2 T coconut flour
- 1 T almond meal
- 1 Serving protein powder (I used lemon lavender vital proteins powder! I prefer collagen protein for best cake like texture)
- 3/8 tsp guar gum (binding agent)
- 1/4 tsp psyllium husk powder (helps keep moist)
- 1 T coconut sugar, or to taste (alternative: 1 T erythritol, swerve or stevia in the raw)
- 1/8 tsp baking soda
- 1/8 tsp salt
- 1 T melted coconut oil, grass fed butter, or olive oil
- Dash of vanilla extract
- A few drops of lavender and lemon extracts or oil
- 1 flax egg (1 T flaxseed Meal mixed with 3 T water, let sit for a couple minutes)
For the icing:
- 2 T powdered erythritol or sugar, sifted (I use the brand Swerve)
- Dash of vanilla
- 2 drops lemon oil or extract
- 1 tsp water, or to desired consistency
Directions:
Add all ingredients in a mug and stir until fully combined. Microwave on high for 1:20 min. Middle will be slightly gooey but that’s ok!
Tip the mug over onto a plate and top with icing. Grab a fork, or your fingers, and enjoy!
